Refactor controls UI

The current UI controls are very clunky, employing as they do the standard Cocoa widgets.
It would be advantageous in many cases if we could define a custom "dial" type control with typical music software behaviour (e.g. click and drag up to raise the value in increments, down to lower it, use shift for more granular increments, etc...)
